Sun Cookie with Gaia Valdemarsdottir

Her creations bring to life magically unexpected combinations, and this one in particular invites a very welcomed dose of golden sunlight in each bite. Let ginger, turmeric, lemon, and vanilla elate your tastebuds and take you to the Sun. 

Ingredients

1/2 cup coconut oil, room temperature
1/2 cup organic sugar
1 thumb size piece of ginger, finely grated
1 thumb size piece of turmeric, finely grated
Zest from one lemon
1 tsp vanilla extract or seeds from one vanilla pod
1/4 cup Monfefo Ginger Shot
1 1/4 cup Anson Mills GF flour
2 tbsp corn starch
1 tbsp ground fennel seeds
1 tsp ground grains of paradise (can be substituted with cardamom)
1/4 tsp xantham gum
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder 

 

Preheat over to 375 F. Line two half sheet pans with silpat or parchment paper. In a bowl of a stand-mixer combine sugar, coconut oil, vanilla, grated ginger, turmeric, and lemon zest. Beat on medium high for about a minute. Add the Monfefo ginger shot and mix for a few seconds. Meanwhile whisk together flour, cornstarch, fennel, grains of paradise, xantan gum, baking powder, baking soda, and salt. Add the flour mix to your bowl and mix everything together until combined.
With a cookie scooper (or your hands or spoon), scoop out 7 portions, 6 fit on a sheet. Press them down with the palm of your hand and bake them for 10-12 minutes but start checking after 9 minutes. I usually do a tester cookie before doing the whole batch because baking can be so temperamental and things like precipitation, humidity, and order of ingredients can all change the ph of what you're making. 
Eat them right away! Store them in the freeze! Whatever you want, you do you! We hope they transport you to times of sunshine and adventure!
