Mushrooms + Turmeric Orange Dressing

Ingredients


Mushrooms:

1/2 pound of your favourite mushrooms (we used maitake and king oyster)
1/2 tsp ground turmeric
1/2 tsp smoked paprika
2 tbsp olive oil
Salt and pepper 

Dressing:

1/4 cup turmeric shot 
2 tbsp sesame oil
1 clove of garlic, crushed
1 tsp honey
1 tsp tamari sauce
1 tbsp champagne vinegar or lime juice
Salt and fresh cracked pepper 

Garnish:

Mint
1/2 an orange segmented
1/2 cup turmeric shot

Process

Mushrooms: Mix Mushrooms in spices, olive oil and salt and pepper until well coated and set aside. Heat a cast over medium high heat, add 1-2 tbsp olive oil and once the oil begins to shimmer, add the mushrooms and leave to sear - do not move them! - about 2 minutes and then flip. Remove when tender and golden.

Dressing: Whisk together all ingredients and add enough salt and pepper to your liking.

Garnish: Reduce turmeric shot in a small pot over lowest heat for 6-8 minutes until thickened to the consistency of honey.

Using a large mixing bowl, gently toss warm mushrooms in the prepared dressing and plate immediately, drizzle over turmeric shot reduction, top with fresh mint and orange segments. Enjoy over rice, with a fresh tortilla, or with roast chicken or fish!
