Frozen Lemon Cups

We're welcoming Summer with these Frozen Lemon Cups, also known as Sorbet Di Limone. Simply made with lemon, ginger, honey, coconut, and fresh passionfruit or your favorite, juicy seasonal fruit, we're enjoying these poolside in the hot Summer sun, dreaming of Italian summers by the sea! 


- 3 lemons
- 3/4 cup Cocojune coconut yogurt
- 2 tbsp Monfefo ginger
- 2 oz honey
- water
- passionfruit (or your favorite seasonal fruit)


Slice the lemons in half and juice them and remove the pulp from the inside of each. Set aside the juice and cover and freeze the cups. Add water and honey to a small saucepan over medium heat to create a simple syrup. Stir until the honey has dissolved and let cool. Combine lemon juice, Monfefo ginger, simple syrup, and coconut yogurt in a freezer safe bowl, cover, and freeze for at least an hour. Once frozen, scoop the coconut yogurt mixture into the lemon cups and serve topped with lemon zest, honey drizzle, and fresh seasonal fruit! Cheers and buon appetito!
