Cucumber Ginger Salad

With the beginning of the Summer season, Sasha created this Cucumber Ginger Salad to welcome cooling and hydration to any spread. This recipe is rooted in the energetics of Summer: release, joy, play, awareness, vitality, connection, and expansion. Ingredients:

- 1 small cucumber
- 1/2 tbsp Monfefo Ginger Shot
- 1 tbsp pickled ginger, chopped
- 2 tbsp rice vinegar
- salt
- cooling herb such as cilantro, parsley, or dill
- coriander seeds (fresh or dried)

 

Slice cucumbers in rings and place in a bowl. Pour in ginger shot, rice vinegar, pickled ginger, and a generous pinch of salt. Marinate in the fridge for 30 minutes. Sprinkle the top cooling herbs and coriander seeds. Pair with any savory bowl, a simple bowl of rice, greens, or serve by itself in any Summer spread. Enjoy alongside early mornings of rising with the sun and long days spent outside!
