Bone Broth

A recipe to nourish one's immune system during this Autumn season. Bone broth is overflowing with vitamins, minerals, and amino acids to support the body and its functions. The simmering of the ingredients allows for the nutrients to be released into the water and easily absorbed when you enjoy. Let the nourishment begin.

Ingredients

4-6 chicken thighs + 6 chicken wings (pasture-raised, if possible)
2 tbsp of apple cider vinegar
1 yellow onion
4 stalks of celery
5 carrots
whole bunch of parsley
3 cloves of garlic
spoonful of whole black pepper
3 tbsp himalayan salt

2 bay leaves

Instructions

Begin by adding chicken bones, apple cider vinegar, and salt to 8 cups of water in a pot and bring to a boil. While the water is getting ready to boil, add a whole onion to the stovetop and let it get all charry and delicious. In a cheesecloth, add the parsley, garlic cloves, black pepper and 2 bay leaves and tie it up with a string. Feel free to be creative here and include any herbs or spices that you enjoy. Once the water begins to boil for about 2-3 minutes, bring to a simmer. Take a strainer or spoon and skim off the white foam from the soup. Once the soup is clear and magical, add the carrots, celery stalk, charred onion, a tbsp of salt, and the cheesecloth of herbs and spices. Let it simmer on a low heat for 6-10 hours. Once the the broth smells and tastes rich with flavor, pour yourself a cup and add a splash of a monfefo ginger shot to bright up the flavors and soothe the soul :) Enjoy!
